Refreshing and nutritious Poke Bowl
I'm a sucker for going out and buying poke bowls on my work break, and let's be honest,
it is not a cheap habit. What I have created here is an easy to follow poke bowl recipe that won't break the bank, it will fill you up and most importantly, taste amazing. Have at it and enjoy.
Ingredients
Serves 1
150g tofu, cubed
½ avocado, sliced
¼ cup cucumber, diced
¼ carrot, shaved
¼ red capsicum, sliced
½ cup edamame
1x cup of rice, ideally cooked and cooled
Seaweed and sesame seeds to garnish
Tofu Dressing
½ cup soy sauce (salt reduced)
2x garlic cloves, minced
Sesame seeds
Sauces
Kewpie Mayonnaise
Sriracha Mayonnaise (Vegan)
Method
Preheat the oven to 180° Celsius and line a baking tray with baking paper.
Marinate tofu in a bowl with tofu dressing and bake until golden brown, about 25-30mins.
Place rice, avocado, cucumber, carrot, capsicum, edamame into bowl, followed by baked tofu.
Drizzle with sauces, add seaweed and sprinkle with sesame seeds to serve.
